Vegetarian Sloppy Joes

One of the hard things about changing your eating habits is letting go of comfort foods.  One of the best things about changing your eating habits is finding healthier versions of foods you might have otherwise put into the category of “I’ll never be able to eat it again.”

These sloppy joes are just as tasty as their meat-based inspiration.  But, they are so much healthier for you.  No cholesterol! Low fat!  High fiber!  Give them a try!

Ingredients:

2 tablespoons oil
3/4 cup chopped onion
2 cloves garlic, minced
2 15 oz. cans kidney beans, drained and rinsed
4 tablespoons ketchup
1 1/4 cup ricotta cheese
1/2 tsp black pepper
1/2 tsp dried parsley
1/4 tsp turmeric

Directions:

In a large skillet, saute onions in oil until soft and translucent, season with turmeric and add garlic. Cook for another 2 or 3 minutes, but do not allow garlic to burn.

Add rest of ingredients, except for ricotta cheese. Cook over a medium heat for about 5 minutes, making sure that everything is well incorporated.

Mash beans with a potato masher to create a smoother texture and add ricotta cheese, mixing well.

Lower heat and cook on low for about 10 minutes.

Serving:

This is meant to be served on hamburger rolls. A nice complement would be some tossed salad, or some raw vegetables (baby carrots, cucumber slices, etc)

Alternately you can scoop some into a bowl and eat with some warm crusty bread for dunking.

Variations:

  • use BBQ sauce in place of ketchup and eliminate other seasonings
  • replace 1/2 the onions with chopped sweet peppers
  • use pink, white, or even black beans
