Honey Lemonade

This is nice to make when you’re having a summer barbecue and are feeding more than just a few.  Alternately its a nice treat for the kids and their friends on a particularly hot day.

Ingredients:

4 cups lemon juice
3 cups honey
24 cups cold water
48 ice cubes (4 full trays)

It would take approximately 32 lemons to make 4 cups of juice. This is a case where you will surely find that purchasing lemon juice will be cheaper than then lemons themselves.

Directions:

Heat honey and lemon juice on the stove, stirring frequently, until it blends together as a syrup. Remove from stove and allow to cool.

Meanwhile fill a beverage dispenser or even a large pot with water. Please be sure that the container you choose has a capacity of at least 3 gallons.

Add honey-lemon syrup to water a ladle at a time, adding a handful of ice cubes after each addition, and mixing well to incorporate until all of the syrup and ice are mixed with the water.

Serve immediately.

Serving:

If you’re feeling particularly fancy, or if you’re serving this for a special occasion, add a wedge of fresh lemon (well scrubbed) to each section of your ice cube tray before filling with water. If you choose this option please allow for another 8-12 ice cubes in the recipe.
